Appalam/Pappad
Appalam or Pappad is an important part of Indian cuisine. Pappad preparation method varies slightly in different parts of India. Even though, they vary a little in taste depending on the ingredients such as either lentils, chickpeas, black gram (urad flour), rice, or potato, it is one of the sought after dishes by many.
Cracked black pepper, red chilli powder, asafoetida, garlic, cumin or sesame seeds are sometimes used for flavour. Salt and peanut oil are added to make a dough. The dough is shaped into a thin, round flatbread and then dried (traditionally in the sun), and is cooked by deep frying, roasting over an open flame, toasting, or microwaving, depending on the texture preferences.
